Pork contains lactones, which give subtle fruity flavors such as apricots, peaches, and coconut. Also, pork works really well with apples, which can cut through the fatty richness, so serve belly pork with stewed apples on the side, preferably made with rosemary and orange peel. Drinking this with a Pale Ale, which gives a stone-fruit flavor of peach, apricot, that is great with pork and apple. The beer’s bitterness balances the fat by lifting it, the hops pick up on the wood-citrus of the herb, and the base of malt carries the meat flavor. Pale Ale and pork belly are always good pairing
