Finely chopped white cabbage, iceberg lettuce, scallions (spring onions), cucumber, and carrot, plus a handful of beansprouts, Thai basil, cilantro (fresh coriander), and crushed salted peanuts with a dressing of fish sauce, lime juice, garlic, sugar, and hot chili pepper. This is a super salad that’s light, fragrant, spicy, and fresh-and you need a beer with a similar vibrancy, ideally aiming at the citrusy herbs and the lime.
